Mix all ingredients in a Spiral Mixer 3 Min low speed + 4 min medium speed
1st fermentation 10 Minutes
Dividing Flatten the dough on a table. Cut pieces
Resting None
Shaping Sheet it down to 2 mm, then pik it down
Proofing 100/120 minutes at 40 Degrees Celsius and 90% RH
Baking (deck oven) Bake at 140°C for 10 min
